I am absolutely in LOVE with this recipe – I could not believe how quickly my family ate these bites up

I am in the middle of moving – so I am trying to use up what I have in the kitchen so I do not have to trek it across town – so I am challenging myself to use it ALL up!!!

I had these bacon bits from a previous recipe ( but not something I normally use) and that got me thinking about doing some sort of baked potatoes and with football season starting up I knew I wanted to make some sort of snack you could eat with your hands

I am very happy how these bites turned out – I hope you enjoy them too

As you can see I am keeping this recipe SUPER simple — If I were to make it again ( and I am ) I would try and figure out how to add sour cream to the dish ( if you have any ideas let me know )

Loaded Baked Potato Bites Recipe

Ingredients

  • 3 Russet Potatoes
  • ¼ Cup of Butter
  • ¼ Cup of Green Onions Diced
  • 1 Cup of Cheddar Cheese
  • Bacon Bits

Instructions

  1. Preheat oven to 400
  2. Slice the potatoes - I made them a little under ½ inch wide - place onto a cookie sheet lined with parchment paper
  3. Melt the butter and brush onto the potatoes - I made sure to cover the potato fully
  4. Bake the potatoes for about 20 minutes --- this will make them crispy
  5. Take the potatoes out of then oven and brush the rest of the butter onto the potatoes ( one side)
  6. sprinkle with cheese and bacon bites
  7. Bake for 10 more minutes
  8. Garnish with the green onions
  9. Serve and Enjoy

    After they are placed into each persons plate
    Add a dollop of sour cream to the top of each.
    Yummy!!!

    I really enjoyed them they were easy to make and tasted wonderful. I will definitely be making these again. The only change I made was I used real bacon because I can’t have sulfites. Thanks for sharing your recipe.

    im gonna try these for superbowl. I just made and crumbled the bacon. I am going to try and save a few calories by using olive oil spray instead of butter and using 2% cheese. I may mix up some lite sour cream and chives and put a small dallop on top or just put it in a bowl to dip.

    Made these tonight. Used olive oil spray, baked for 20 minutes then drizzeled with olive oil, baked 10 more minutes, then sprinkle cheese and real bacon bits and dried onions minced(didn’t have any green onions on hand) baked 5 more minutes. Turned out great.

    I tried making these the other day but they weren’t very crispy even though I left them in longer when it seemed they weren’t done. Do you brush butter on both sides initially then just one side after the initial baking? Or just one side each time?

    They were still delicious, but I would love to get them crispy!

    I love theses have made them several times and everyone loves them. They are so easy. I put butter on both sides at 1st and flip them 1/2 way through the 20 mins. I do this ahead then when I am ready to serve them I pot the cheese and bacon on that way it only takes me 10 mins.

    I do these but sprinkle the potato with some powdered ranch season before adding cheese and bacon bits. Yummy!

    Just pulled these out of the oven, they look great! I added a tiny pinch of garlic salt to give it a little extra flavor.
